This is as basic a recipe as I can think of, and oh so good! You can use this as a base for many other things.
Ingredients:
2 eggs
1 medium sized clove of garlic
olive oil for sauteing garlic ( so just a little)
about 1.5 cups of olive oil blend, do not use extra virgin
1 lemon
sea salt
boil the two eggs for 1 minute
remove from the water and set aside
sear the garlic clove until it is brown on all sides
save the oil and let cool a little bit
place in a food processor:
YOU MUST OWN ONE OF THESE
it will be the best thing that has ever happened to your kitchen
garlic clove + 1 tbls. fresh lemon juice (no seeds)
grab the whole eggs one at a time and crack the middle of the egg with a spoon, let the runny whites fall into the garbage or sink and scoop out the yolk
do this with both eggs and place in the F.P. (food processor)
let this mixture run for 2 whole minutes
then in a slow steady stream add enough oil to turn thick
a dash of sea salt
voila! home made mayonnaise
you can add all kinds of things to this:
roasted red peppers
anchovies
cilantro
toasted chile powder
